What to Serve with Cauliflower Gratin?

Tonight, I really want to make an awesome dish from "Cook's Illustrated" called "Cauliflower Gratin with Gruyere and Leeks." What should I serve with this as a main course, to compliment it and round out the meal? We eat meat, and that's what I'd prefer to have... any suggestions? This makes me think of scalloped potatoes, so my obvious choice is ham. We are a small family of three so I generally buy 2 steaks, enough for leftovers. Generally I lay a piece of tin foil on the counter, sprinkle on about 2 tbsp. of brown sugar, lay 1 steak on it, then spread a a thin schmear of a mixture of equal parts mustard and brown sugar, top with the other ham and sprinkle with about 2 tbsp. more brown sugar. Tightly close the ham steaks with more foil and bake for about 1/2 hour on 350. My mother is always on a low carb diet, so she has made something similar. It is really rich and has the same effect as a potato on your belly. I would suggest a green salad on the side. Perhaps with some type of nut with it instead of more cheese.

I think I would have beef. Chicken, fish, or pork will all be pale on the plate sitting next to pale cauliflower gratin. So maybe a London Broil, Salisbury Steaks, Seven Steaks, or even Rib-Eye Steaks.



I'd also do another side dish w/ some color: carrots, asparagus, squash %26amp; zucchini medley, beets, or even a big green salad w/ lots of fresh stuff in it.



Those Cooks Illustrated recipes are the best, aren't they?!
Sounds sooooo yummy with lamb chops grilled like raroo99 said.......can I come??? LOL

Sounds awesome! I'd just do a salad and some reeeally good bread. It sounds a little heavy, so I don't think I'd want meat with it-- I'd let the cauliflower be the main attraction .. (you should put the recipe for the gratin in with your question!- i'd love to make it!!)
If you like mild garlic.. I would suggest a simple Garlic roasted chicken, or if you want to go a little more rich Prime rib or Rack of Lamb.

Seems very versatile鈥? either fried chicken or a nice steak with broccoli or asparagus on the side... depending on casual meal or a nice dinner...
