What is gelatinisation??

Gelatinisation means change into the form of a gel or jelly.What is gelatinisation??
in lemon mirangeu pie gelatinisation occurs when you thicken the lemon curd. it is a change of state that ccurs in sauces such as the lemon curd and turn it from a liquid to the gel like state (almosr like jam).

What is gelatinisation??
My mum used to use gelatin in the yummy trifles she used to make. Instead of a custard topping she would whisk up evaporated milk and add gelatin to make it set.
