Question about a Culinary text book.?

The text book is called THE PROFESSIONAL CHEF, 8TH EDITION.

Here is some more information on it.

So my question is the text book anygood? Also is it worth the $70.00 plus tax?Question about a Culinary text book.?
If you are passionate about cooking, I think the price is reasonable. Think about how much college students pay for textbooks that they only use for 1 semester...sometimes $200! This is a book that you can keep and use for a long time.
